Chaotic Christmas Countdown
Day 67!!
With the loss of our sweet Taz and all of the traveling I am posting a recipe tonight!!! It is a SUPER SIMPLE cake that Todd's mom made for them growing up!!! They all LOVE it and his sister gave me the recipe this weekend!!!
Vanilla wafer cake
Cook time one hour
2 sticks butter
2 cups sugar
2 cups chopped pecans
5 eggs
Can of coconut flakes 3 and 1/2 oz
12 oz vanilla wafers crushed (I use a box of them)
1/2 cup milk
Cream butter and sugar. Add eggs one at a time. Add half of the vanilla wafers
crushed fine. Add coconut, nuts, and milk and the rest of the wafers. Spoon into
a greased and floured bundt pan. Bake at 325 degrees for one hour. Leave in pan
10 mins to cool.
