Recipe Help

Ok....I am HORRIBLE at cooking dinner!!  It is NOT that I don't like to cook BUT I hate trying to come up with new things to cook and try!! 
SOOOO here is my request from you!!  I am going to try to cook something new for 30 days which means that I will need 30 new recipes!!  Will you help me??  I need any REALLY good recipe that you would like to share with me!!  I will cooks these and blog about them over the next month!!

I only have a few things that I will not eat...

PORK and Asian food!! 

I can not wait to see what recipes you guys come up with!!

  4. An easy after work recipe that will feed the entire family.

    Servings: 4-6
    Prep Time: 15 min
    Cook Time: 20 min
    Difficulty: Easy
    Ingredients Add to grocery list

    1 lb browned and seasoned ground Beef (Italian sausage can be substituted)
    3/4 lb.spaghetti, cooked
    1 jar (approx 15 oz) of your favorite pasta sauce
    2 cups Mozzarella Cheese, grated
    Directions

    Preheat oven to 350 degrees.

    In a large sauce pan, simmer meat and tomato sauce together. Toss the cooked noodles in the sauce.

    To Assemble: Spray a casserole dish with non stick cooking spray. Spoon half of the noodle mixture into the dish. Pack it down lightly and sprinkle on half of the cheese. Add the other half of the spaghetti, pack down lightly and top with the rest of the cheese. Bake for approximately 15-20 minutes or until the cheese is bubbly. Serve with a green salad and crusty garlic bread. I always have used the Italian Sausage!

  6. heesy enchiladas topped with sliced olives.
    Preparation Instructions

    Dip tortillas in hot oil to soften. Once they are soft, remove from the pan and drain on a paper towel. Then dip tortilla in enchilada sauce then lay flat on a plate and add some cheese and onions to the center of tortillia. Roll up and lay in a baking dish (or pan) seam side down. Repeat procedure laying the rolled tortillas side by side in the dish. Pour remaining sauce over them and top with olives and remaining grated cheese.

    Bake at 400F for 15 minutes. I serve this with refried beans, Spanish rice and tacos. Makes a great meal!
    Ingredients

    1 package Corn Tortillas (12 In A Package)
    6 Tablespoons Oil (for Softening Tortillas, More If Needed)
    1 pound Grated Cheese (you Can Grate Your Own)
    2 cups Onions, Diced
    4 cans Enchilada Sauce (I Use Old El Paso Mild 10 Oz Cans)
    2 cans Sliced Olives (I Use Mario Black Olives 2.25 Oz Cans)

  7. A few recipes from Missy Lumpkin.... :). DISCLAIMER: I am a terrible at actually measuring so these are estimations....

    Easy ranch potato soup:
    6-7 russet potatoes ( bag size)
    3 packets ranch dressing
    Pint half/ half
    Stick of butter. BUTTER not the fake stuff! Lol
    Salt/pepper
    Garnish with cheese, bacon and chives...

    Peel and cut potatoes (smaller chop, approx size of grape), boil in salted water, just enough to cover potatoes, until the potatoes are literally falling apart, ( appro 20-25 min @ med high) then add a stick of butter (DO NOT drain) and 2 packets ranch dressing, the powder mix. Stir well. Add in about 1.5 cups half and half. Cont to boil on med. adjust salt pepper to taste and if you want a little more ranch taste add some or all of the 3rd paket I'd dressing. We like ours really "ranchy". Lol. That is all there is too it! If it is a little too thick, add milk or half and half. Garnish with grated sharp cheddar and crumbled bacon and a few chives if you like....
    I know you said no pork, but it won't be the same without a little crumbled bacon on top! Big pan of cornbread and you have a nice easy supper!!

    I make an easy chicken rotfl that is good and supper easy!
    1 lg can of chicken. ( white meat)
    1 bag of Doritos (any flavor you like)
    1 can cream mushroom soup
    1 can rotel
    1 lb velvetta cheese
    Place all ingredients except Doritos in a pan and heat until cheese melts on about medium heat so not to stick.
    Layer 9x13 pan with crushed Doritos then the soup/cheese mixture. Top with more Doritos. Bake 350 about 20 min till bubbly. Add a veggie like green beans or broccoli and there is dinner.... (we hate soggy chips so we actually just pour the cheesy soup mixture over our crushed chips and I never even put it in a casserole or bake it)

    Loose meat burgers or potatoes
    1 can beef broth
    1lb hamburger (leaner is better)

    Brown hamburger meat. Then add in the can of beef broth and reduce until almost all the liquid is gone, leave a little "juice" . Put it in hamburger buns with onion or over a baked potato with cheese and sour cream or ranch dressing.... This is from Rachel Rays 30 min meals.

  9. This is a family favorite. Cabbage and Corn Beef

    4 slices of bacon
    4 tablespoons of butter
    1 head of Cabbage coarsely chopped
    1 can of Corn Beef
    water
    salt and pepper

    Cook the bacon in a large pot until crispy. Remove from pot. Add butter and cook till melted. Add Cabbage and stir till it is coated with the fat. Cover and cook on med heat for 10 to15 mins. Add salt and pepper to taste. Scatter chucks of Corn Beef,stir in. Cover and cook till desired doneness.. I like mine with a little crunch left to the Cabbage.

    TIP:
    Cabbage makes it's own water.As Cabbage cooks it may need a little water. Begin by adding just a small amount of water 1 to 3 tablespoons.

    This is fast easy and so good. You can use the bacon for breakfast the next day or for a snack.

  11. Your kids would LOVE this recipe, me and my sisters are obsessed, so everything they come visit me or I go home, I make it for us!

    Chicken and Dorito Casserole:
    Ingredients: 1 bag of doritos (family size), 1 can cream of celery soup, 1 can cream of chicken soup, 1/2 cup chicken broth, 1 lb. velveeta cheese, 1 can rotel tomatoes, 4-6 chicken breasts
    Directions: Cook the chicken however you like, I usually boil it or cook it up in a skillet, let it cool enough for you to shred it or at least tear it apart some. (You could also cut it up into chicken cubes or strips, whatever you prefer!). In a saucepan on the stove, or in the microwave, melt together the soups, the rotel, the velveeta, and chicken broth. Lay a single layer of doritos in a 9x13 glass pan, sprinkle the shredded chicken over top the doritos, then pour the soup mixture over top the chicken. Bake in the oven at 350 until bubbly (could be 15-25 minutes, everything is already cooked, so it shouldn't take too long), take it out and crunch up more doritos on top, then stick back in the oven for 5 more minutes. Let cool for about 3-5 minutes just so the sauce can thicken up a bit.

    I hope you enjoy this! I haven't had any complaints yet, I realize it's different, and sounds weird, but it's delicious!

  12. I'm back, and I have a recipe for you! It's called Husband's Delight Casserole and it's delish!
    1lb ground beef
    2 cloves garlic
    1tsp sugar
    1tsp salt
    1/2 tsp black pepper
    4 cups dry egg noodles (1/2 lb)
    5 scallions, chopped
    1pkg cream cheese at room temp
    1 8oz container of sour cream
    16 oz of tomato sauce
    1/2 cup shredded cheddar (although I use way more of that!)

    Brown beef, drain.
    Add in garlic, sugar, salt, pepper and then add in tomato sauce. Cover, simmer for 15 minutes.
    Cook noodles
    In small bowl, combine softened cream cheese, sour cream and chopped scallions.
    Lightly coat bowwom of baking dish with cooking spray.
    Arrange noodles, evenly at bottom of baking dish. Spoon meat sauce evenly over noodles. Carefully spread sour cream mixture over top.
    Sprinkle with cheese and bake at 350 for about 30 minutes or until cheese is bubbly.

    Sounds like a weird combination, but it is SOO good and my kiddos love it! Enjoy!
