Jen's Favorite Cookies!

My guest today is Jen!!  She is KILLING me with all of her recipes considering I have a sweet tooth the size of TEXAS!!!! I WILL be making these.....maybe for MC's snacks for class!!!

Here she is....


A recipe for a whoopie pie made with orange soda and vanilla cream. Source: Bakaholic Mama's version had only three ingredients. My version has just six. Yield: about 20 whoopie pies I feel honored that Randee asked me to guest post today. I guess I should start with a brief introduction. Hi, I'm Jen. I live a typical suburban life, with a husband, three kids, and a Jeep Grand Cherokee. Most of the compliments I've received in my life center around my very thick and long dark hair, my mad piano playing skills, and my fantastic desserts. Only one of these things has turned into a full-time blogging obsession for me. Guess which one? Here's a hint: my blog is called Jen's Favorite Cookies. The great thing about making different cookies every week is that you never know what the process will bring. Sometimes the cookies are fussy and complicated, using a lot of ingredients and a lot of time and dirtying a lot of dishes. Sometimes they are so simple you almost forget you even made them. Today's cookie falls into that second category. It's basically so easy, you could do it in your sleep. A trained monkey could make these cookies. Heck, and un-trained monkey could make them! You get the picture. Here's how you do it: STEP ONE: Mix together one vanilla or white cake mix and 1 cup of orange soda. If you're really into that orange flavor (like I am), you can also add 1 tsp. orange extract. Or not, your choice. STEP TWO: Bake. Oh, yeah... you're done with with the mixing already! Drop the soft dough in spoonfuls onto your baking sheet, trying to keep them all about the same size. They don't spread much, so you can put quite a few on your pan. Bake them at 350 degrees for about 10 minutes. STEP THREE: Frost. Bakaholic Mama used Cool Whip for her frosting, which is super duper easy. I'm kind of a cream snob, though, so I used whipped cream. I poured about a half pint of cream into a bowl and whipped it up for a few minutes. I added some clear vanilla and a couple tablespoons of sugar. Feel free to use a generous amount of this "frosting." There's plenty. You just frost the bottom side, and then sandwich them together. Easy-Peasy, Lemon-Squeezy. Orange Whoopie Pie Here's what you can expect from these cookies. Because they don't have eggs or oil, but just orange soda and cake mix, you can expect a very sticky and spongy cake, much like angel food. Which means you can expect them to stick to the pan, and to each other, so you'll want to store these between layers of wax paper. You may even want to keep them in the fridge. You can expect to have a little whipped-cream-frosting left over. Is leftover whipped cream a good enough excuse to run to the market for fresh berries? Because that's what I did. AND, you can expect anyone who loves orange soda or orange creamsicles to ask for seconds of this spectacularly simple whoopie pie. You might want to have a second batch ready.     FOOD Friday!! Spaghetti Calzone

    Ok....I have to admit when I first saw this recipe that I thought YUUUUUMMMMMY!!!!!  Then I started REALLY thinking about it and had second thoughts!!  I almost didn't make it and that would have been a REALLY BAD MISTAKE!!!  It is AWESOME!!!!!!!  ;o

    Recipe!!

    1 Loaf Rhodes™ Bread Dough or 12 Rhodes™ Dinner Rolls, thawed to room temperature
    6 ounces spaghetti, cooked
    1 cup thick spaghetti sauce
    8 ounces mozzarella cheese, cut into 1/2-inch cubes
    1 egg white, beaten
    Parmesan cheese
    parsley flakes
    Garlic
    Butter

    I am super excited to be hosting a Bloglovin' Blog Hop with  Jenny from The NY Melrose Family, Cari and Courtnee from Two Sasters and Amy from While Wearing Heels for the month of April.  What's Bloglovin' you ask?  Well, only the greatest way to keep track of the blogs that you love.  With the discontinuation of Google Friends Connect, I decided that I needed to find another way to keep up with all of my favorite blogs that are not hosted by blogger.  I signed up for Linky Followers and I've had great success with gaining new followers, but I’m finding I don’t get any traffic to my site from Linky.  I also do not enjoy reading my favorite blogs from there.  I stumbled upon Bloglovin' and I am in love!  It is very similar to Google Reader, in that you can see the beginning of the post and the first picture attached to the post.  Plus, Bloglovin' automatically updates your posts, unlike Linky Followers, which you have to manually update each time you write a new post.  I don't know about you, but I just don't have the time to do that every time.  Another added bonus is there is a Bloglovin' application for IPhone and Android devices.  Woohoo!  Like I don't spend enough time reading blogs.  Now it's a simple touch.  Love it!


    ***These are the complete instructions for sign up, so skip to the rules if you already have Bloglovin'***
    In order to participate in this hop you need to sign up for Bloglovin’.  Go to Bloglovin'.   Hit the green sign up button in the right hand corner.  Next enter an email address and create your password.  You will get a confirmation eamil that you will need to follow a link back to Bloglovin' to continue the process.  Once you click on the link you will be brought to a page where it says to choose blogs to follow.  You don't need to do this.  Click next in the bottom right hand corner.  The next screen let’s you know about the mobile app so just click next again.  This screen will show that you are not following any blogs.  Click on Account in the upper right hand corner and toggle down to widget.  Choose the widget you want displayed on your page.  Put your url into the search query and it should pull up your site.  Click on your site and it will say display this icon.  The next page should bring you to a screen that has you display it into your layout.   Once you hit publish you’re done!  If you view your blog you should see the icon and now your followers can add you to their Bloglovin’ feed.  Seriously, so simple.  So let’s get to the blog hop.  This is a party so make sure to have some fun and mingle.

    My husband has 2 of the best Administrative Assistants and they put up with me so I wanted to come up with some CUTE gift ideas for them!!!

    Here is what I came up with...

    The first one is a travel bag filled with goodies!!



    Here are a few things I put in there!!!





    I bought here several facial masks and I think they are COOL!!!  ;)




    I added a gift card to get to go out for dinner!!!


    Then add a CUTE bow and a handmade 
    "THANK YOU" card!!



    The second gift is a nice gift card in really cute burlap wrapping with another handmade card!!!



    I hope that they enjoy their gifts and know how much Todd and I appreciate everything they do!!!  :)

    Tips and Tasty

    WOOO HOOO, it's 
    TIPS and TASTY TUESDAY!!!

    Here are a few tips to help you around the house!

    1. Did you know that baby oil will help remove latex paint from your skin??

    2. You can use Salt as an Iron Cleaner??
    Eliminate sticky residue from an iron. Run the hot iron (no steam) over plain paper sprinkled with salt!!

    3. You can use a Newspaper as Refrigerator Odor Absorber
    Use it as a liner in your vegetable drawer to absorb odors!

    Now for the TASTY!!!  This is a recipe from my SWEET friend Stacey Johnson!!  She owns a shop called 

    She has clothes, jewelry, flip flops....basically anything BLING, BLING!!  
    So be sure to stop by and check her out!!  ;)


    Chicken Enchilada Dumplings



    I use canned chicken cause I can't stand the smell of boiled chicken so...
    • 3 lrg cans of cooked chicken
      1 can cream of chicken
      1 8oz sour cream
      1 can rotel (opt.)
      1 lrg can green Chilis
      1 lrg can blk olives (opt)
      1 pkg shredded cheese (your choice, I use mexican/pepper jack) can also use Velveeta :)

      I combine all the ingredients until bubbly. Tear all tortillas (1 pkg of 10) into pieces (I like bit size). Spray bottom of pan lightly (so tortillas don't stick) Then layer soup mix, tortillas and so on. I sprinkle cheese on top. Makes a LRG pan full. Cook @350 for 30-45 min covered with foil. Then uncover and cook another 10 min.
      Enjoy!!!

      I made this tonight and we LOVED it!!  ;)

    Just Life: We’re all tired
    The other day I went to the Laundromat to… clean clothes obviously. And I decided to bring my Women’s Health Magazine with me instead of work for once. It was a small brain break. I had been reading this mag for about 2+ weeks at this point. But of course the story I opened up to was about women and exhaustion. A topic I am very familiar with (I don’t know how she does it in morning glory http://bit.ly/z09h3y). 
    Women at any age have endured the thought and feeling of they HAVE to do everything. If not everything, then they can’t rest until things are done. And then when we try to rest, we can’t quite keep ourselves from making lists in our head. Single, a wife and/or mother, no matter the lifestyle, there is this pressing thought of “I need to keep going”. I am definitely guilty of this. Surely many of you are as well.
    Is the question, Do we not feel worthy of rest? We could possibly be overcompensating for our fore-mothers who gave us the right to work with the boys, vote and do all the things they couldn’t. Do we feel like we need to constantly keep up? For me many times, it’s more about seeing the balance in my bank account and thinking “If I work more or harder, the number will grow”. I’m not sure if it’s because of how I was raised, but that thinking could possibly kill me with the way I’ve been going.
    The Cosmopolitan Editor-in- Chief, Kate White, even had some words to share on this topic. She revealed that she has been putting some thought into women and exhaustion. Kate mentioned a European banker whose boss said suffered from “a failure to switch off”. As I read the comment, I laughed. Sleep isn’t relaxing anymore either. We “half sleep” and are still semi awake. Some of my best ideas came to me in the morning while lying in bed waiting for my alarm to go off.
    The saddest part about all this is that there even seems to be a competition of who is suffering the most. I’ve had many conversations with friends like this,
    Friend 1: I’m beat and I’m not even done with organizing my files and cleaning the house.
    Friend 2: Me too. I have to call some clients, file, reply to a gazillion emails, brush my teeth, prepare for tomorrow’s meeting, clean the house, get gas in the car, scrounge for money, oh and attend this event for a little while, go to the gym, finish a report for my boss.
    Friend 1: I know what you mean. I also have to clean my car, shop for groceries, babysit Sally’s cat, take pennies to the bank, send out a mass email to my department, donate some blood, travel 3 hours by train to a client, my nephew is coming this weekend, I have no insurance so I can’t go to the doctor, and my To Do List is never-ending.
    It’s like a Pokemon match. You whip out a higher level to beat the other person. In this case, the only way to beat the other person is to stress or overextend yourself. Instead we should be boasting about getting a chance to relax. Supporting each other to relax! Not upping the ante. So take a break, cup of tea and lock yourself in your bedroom with your favorite magazine; even if it’s less than ten minutes. Challenge your friends to do the same and see who wins.

    Birthday Wrapping

    Want a really cute new way to wrap a Birthday present, really fast???


    I took shipping paper and wrapped the present!!  Then I printed out a cute pic of the recipient and my kiddos!!  Trimmed with pinking shears!  Wrap some ribbon around the corner, add some flowers and stamp "HAPPY BIRTHDAY!!!"

    Tips and Tasty!

    Ok.....I have the MOST AMAZING tip today!!  It is
    MIRACLE STAIN REMOVER!!!!

    2/3 cup Dawn
    2/3 cup Ammonia
    6T Baking Soda
    2 cups warm water

    combine all in a spray bottle!

    Spray on stain and let set a few minutes...wash as usual!!  FANTASTIC!!!  ;)



    My "Tasty" today is something that I made by PURE ACCIDENT and the kids LOVE, LOVE , LOVE them!! 

    They love it when I take a tortilla and spread butter, sprinkle with sugar and cinnamon BUT I did not have any tortilla's so I tried a can of biscuits!!  The biscuits are their new FAVORITE snack!!  ;)




    I patted out the biscuits!  Then spread on the butter and sprinkled with sugar and cinnamon!  

    Then rolled them up like I would a crescent roll!  Baked as directed!!






    Let's just say there weren't any left!!  LOL!!!  ;)

    Butterfly School Snacks

    MC was the "leader" today and so she wanted "REALLY CUTE SNACKS, MOM!!!!" so this is what I came up with!! 


    Aren't they SOOOO STINKIN CUTE???

    I just stuffed goldfish in one side and grapes in the other side!  Tied down the middle with a pipe cleaner and twisted to make the antennae!!  Then I let MC paint the popsicle sticks, glued eyes on and
    VOILA'!!!!!!

    She was SUPER proud and I love the fact that she contributed!!!  ;)

    Sleepy Sunday Linky Party

    WOW....hard to believe another Easter has come and gone!!!  We had an awesome Easter celebrating our Christ rising from the grave!!!  This week is Jenn's turn and her giveaway so here she is.......

    Happy Easter everyone! By the way, did you know that the Easter 'Octave' actually lasts eight weeks?! So, even though we took a week off last week, it's not too late to wish you all a Happy Easter! Last week, I decided to take the WHOLE week off and celebrate Easter (and a wedding - so fun!) with my family. Good fellowship (and GREAT music) in church, followed by good food, a GREAT time with family and more Easter egg hunting than I can remember! We are truly blessed!

    Last week's party was full of great Easter and Spring decorating ideas, so I hope everyone took a few minutes to look around and leave a comment or two for your fellow crafty party goers. I know I love hearing from others and I'm sure you do too! In honor of the NEW life we have been given in Christ, I wanted to introduce you to three newcomers to our Sassy (Sleepy) Sunday Blog Hop and thank ALL of you for sharing your ideas with us!

    And last, but not least, this darling Easter Cloche from Marisa @ Marisa's Pieces Online. I too am a fan of Ballet Slipper Pink (wink, wink) and this project is super cute!!

    And here's what she's won!!


    What is it you ask?! Well, that's a very good question. It's obviously very old and used to measure things, but what exactly it is . . . . well, I'm not really sure! It has an adjustable piece with brass inlays to help keep it accurate over time and a tiny metal pin on one end that makes me think of a compass, but I don't think that's what it is. I have asked a few people, including a carpenter and an architect, if perhaps they had any ideas, but so far I haven't come up with anything definitive yet.



    Would, love, love, love if anyone knows anything to let the rest of know so we can all learn something new about this little piece of history I found in Round Top! I look forward to sharing all my 'Friday Finds' from Round Top this week, as well as a couple of of projects I am finishing up for the kids' room! In the mean time, you know the rules . . . .!
